I gave it another shot to make the perfect roast on the Traeger again, did everything following a recipe and it all was set up for success.
Added beef broth after I took this picture and sealed it all up with tin-foil. She cooked for over 6 hours and then I let it rest for 30 minutes.
the taste was great, veggies were perfect and all, but the roast was just not as tender as I had expected. what the???
I think I have had about a 50/50 success rate getting the finished roast I expect.
Maybe it was the cut of meat or something? Not sure, but I have never made a bad roast in the crockpot.
Hmmm, makes ya think – what did I do wrong?
