I made a double-batch of White Chicken Chili today for Lisa’s pot luck tomorrow at work. It filled the pot on the stove to the top, and filled the crock-pot up pretty good too when it was all said and done.
This is a recipe from our Metabolic Research Center’s web page and man, I really love it. If it is healthy, and delicious – why not?
We only got a couple little bowls from this batch and Lisa hated it. It was ‘too hot’. I know she does not like hot stuff so I did not put a single jalapeno in it, or no diced jalapenos in it to keep it mild.
They are all still setting on the counter. I thought it was a huge set back to the flavor of it, but who am I? Oh well.
I thought it was awesome, delicious and – well mild, but still good.
Next time I will NOT be participating in their chili cook-off.
